Aside from the obvious choices like Slade, Wizzard, Band Aid et al, I've always loved Ring Out Solstice Bells by Jethro Tull:

I've also always been partial to the Power of Love by Frankie Goes to Hollywood, which isn't really about Christmas (the lyrics are about keeping vampires from your door) but still gets onto all the Christmas Compilation albums for some reason. Go figure...

Phil Spector's Christmas album is the best Christmas album ever. You've probably heard half of it without realising.

Darlene Love's "Christmas (Baby Please Come)" is, in my eyes, the most perfect Christmas song.

And for my own sentimental reasons, I adore "Christmas Wrapping" by The Waitresses, which is '80s cheese but the alternative radio station always, inevitably played it during Christmas season when I was a kid and it holds a special place in my heart:
