I ended up walking up the roof, rolling to avoid the arrows until I was able to aggro him to use his sword, at which point I ran back down the roof and let him fall off. If he hadn't fallen off I would've been screwed though,naw the two lightning demons were waiting for me down at the bottom.

Those lightning demons you can take care of by staying at the top of their set of stairs, running part way down, then back up. They fall down or line up for death quite fast then.

Oh yeah, I was just so sick of doing that run from the bonfire to the knights that I gave up on fighting them and just sprinted past them.
