It's really awkward when it seems that P&T know what's happened but are trying their best not to say exactly what it is to give away the trick, it feels like a few of the successful foolings are purely because P&T didn't use an exact word or terminology rather than because they actually don't know.

I don't know if you've gotten to this bit yet, but over the course of the show they explain how it works.

When the magicians go in for an audition or whatever, they perform the trick for one of the producers, who is a long time magician himself. If the act gets through, then they have to explain exactly how the trick is done to this producer. The producer doesn't relay this information to P&T.

After the performance on the show, when P&T are discussing the trick during Jonathan Ross/Alison Hannigans debrief with the act, the producer can hear everything P&T are saying.

The producer knows how P&T thinks the trick is done, and he has the final say about if P&T were fooled or not, and he can - and has - made that decision for them in the past, and he's done it in both directions, telling them that they were or were not fooled.

There was a really awkward one in season three or four where Penn did his long monologue of clues, and at the end the ESL magician was like, "I'm sorry, my english wasn't good enough to understand that" and the producer had to step in and say they weren't fooled.
