Songs with Long Instrumental Sections?

Well, for music I need to get a piece of intrumental music, then change it around and then add vocals to it so can anyone name me a long instrumental piece (around 2-3 mins long, more would be nice)?

Rhapsody have long intrumental sections in practically every song. That's kinda classical though.

There's only really one song you really need though; Symphony X: The Odyssey.

Surf rock seems to be another good genre of music for this sort of assignment. Most anything you dig up from Dick Dale and the Deltones, Link Wray and His Raymen, and the Phantom Surfers will meet this criteria. Specifically you should look into the following:

Dick Dale and the Deltones - The Victor, Surf Beat, Shake and Stomp

Link Wray and His Raymen - Rumble, Run Chicken Run, Ace of Spades

Phantom Surfers - Sheena was a punk rock, Curb Job, Grindhouse

Some other songs minus the vocals:

Just get Agalloch's The Mantle album. There are a couple, 2 or 3, instrumental tracks on it, and the other songs are all around ten minutes long anyway, so they have instrumental bits as well.

Well, it doesn't really meet your 2-3 minute mark, but the instrumentals in last minute and half of That Smell by Lynyrd Skynyrd is pure awesome, especially the dueling guitar part right near the end.
