I had never won a blitzball game until I bought the remastered version and then I won the only one that's part of the story. Haven't played since because I don't like it.

Oh and it also comes not too long after a fight with Beatrix has something rare, in which the battle is timed and has a nice long sequence in between too.

Answering that you want him "to defeat the most powerful enemies" gets his lowest starting price of 250,000. Then bid as follows:

HIS 1ST OFFER: 250,000

YOU BID: 125,001 (half plus 1)

HIS 2ND OFFER: 225,000

YOU BID: 112,501 (half plus 1)

HIS 3RD OFFER: 202,500

YOU BID: 141,750 (70%)

HIS FINAL OFFER: 190,350.

So the cheapest you can get him for is around the 190k mark. The maximum (answering the question wrong and immediately meeting his price) is 300k.

If you offer him triple what he's asking then he'll give you two Teleport Spheres as well, but that's just silly.

Also, when do I get the airship so I can go back and get the collectible stuff I've missed? I've just done the Ronso fight with Kimari, so I'm basically at the bottom of Gagazet.

You're pretty close. After/during a boss fight in an upcoming temple, make sure you open that spoiler I mentioned or you'll miss a very hard to get and useful item.
