There is one thing that starts in epilogue of book 3 that almost certainly won't happen in the show but might happen in the show. Other than that, pretty safe to read all of them now after the last episode.

Show-Brienne really is the worst. She just goes around killing off important/liked characters.

Also I love how she just stumbled upon Arya and Sansa while wandering a goddamn continent whilst having no idea where they were.

You'll stop worrying about spoiling the show when you realise how much better the books are in comparison. The stories aren't dumbed down or combined for the constraints of TV there. If you love the characters and the world, you'll love the books!
